Blood Sugar–Balancing Vegetable Soup

 

Sauté Aromatics (Optional):

In a large pot, heat the olive oil over medium heat.

Add onion and garlic; sauté 2–3 minutes until translucent.

Add Vegetables:

Stir in the diced potatoes, carrot, bell pepper, cabbage, and celery.

Cook for 3–4 minutes, stirring occasionally.

Simmer the Soup:
