1/4 cup vegetable oil
4 large eggs
1 can (20 oz) crushed pineapple
(Reserve the juice to pour over the baked cake; use the pineapple for frosting)

12 oz whipped topping (thawed)
1 box (3.4 oz) instant French Vanilla pudding mix (or pistachio – optional)
Reserved crushed pineapple (from cake)
1 to 1 1/2 cups shredded coconut
