Ingredients for 4 people
For the filling:
2 tbsp olive oil
1 small onion or 1 shallot, finely chopped
500 g button mushrooms, cleaned and sliced
150 g smoked ham (or smoked bacon lardons), diced
2 tbsp butter
2 tbsp flour
360 ml lukewarm milk (whole or semi-skimmed)
50 g grated cheese (Emmental, Comté, Gruyère or Parmesan)
2 tbsp chopped fresh parsley
Salt, freshly ground black pepper
A pinch of nutmeg (optional)
For assembly:
1 roll of all-butter puff pastry (300 to 350 g)
1 egg yolk + 1 tsp water for the egg wash
