Preheat the oven to 180°C (gas mark 6).
Separate the egg whites from the yolks into two bowls.
To the bowl containing the egg yolks, add the cream cheese, mustard, and double cream. Whisk until smooth.
Beat the egg whites with a pinch of salt, then gently fold them into the previous batter with a spatula, lifting the batter to retain the air.
