Recipe: Sweet and Sour Chicken with Bell Peppers and Pineapple

Ingredients:

For the Sweet and Sour Sauce:

1/4 cup of fresh pineapple juice

2 cloves of garlic, minced

2 tablespoons of water

2 tablespoons of apple cider vinegar

1 tablespoon of low-sodium soy sauce

2 tablespoons of brown sugar

2 tablespoons of ketchup

1 tablespoon of cornstarch

For the Sweet and Sour Chicken:

1 1/4 pounds of boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

1/3 cup of cornstarch

2–3 tablespoons of vegetable or canola oil

1 medium onion, diced

1 green bell pepper, seeded and diced

1 red bell pepper, seeded and diced

1 1/2 cups of fresh pineapple chunks

2 pinches of crushed red pepper

Salt, to taste
