Ingredients
For the Cabbage Rolls:
1 large head of white cabbage (about 1.5 kg / 3 lbs)
500 g (1.1 lbs) ground meat (beef, pork, or a mix)
1 large onion, finely diced
1 large carrot, finely diced
2-3 garlic cloves, minced
2 large eggs
1 tablespoon fresh parsley, chopped
1 tablespoon all-purpose flour
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon sweet paprika
2 tablespoons vegetable oil (for sautéing)
For the Vegetable Bed:
2-3 medium potatoes (about 400g), thinly sliced
1 large tomato, sliced
1 bell pepper, cut into strips
2-3 mushrooms, sliced
1 red onion, sliced
60 g (½ cup) canned corn, drained
2 tablespoons vegetable oil
Salt, black pepper, and garlic powder to taste
For Topping and Serving:
100 g (1 cup) grated Gouda or Mozzarella cheese
2 tablespoons olive oil
Fresh dill or parsley, chopped for garnish
Mixed green salad, for serving
