Coconut fondant cakes

 

👩‍🍳 Step-by-step preparation
Melt the butter
Place the butter in a small saucepan and melt it over low heat. Set it aside to cool slightly.

Preheat the oven
Set your oven to 180°C (conventional heat).

Mix the dry and wet ingredients
In a large bowl, whisk the eggs with the sugar until the mixture is frothy and slightly pale.

Incorporate the coconut and flour
Add the shredded coconut, flour, and baking powder. Mix well to obtain a smooth batter.

Add the liquids
Gradually pour in the milk while mixing, then incorporate the melted and slightly cooled butter.

Baking

For a large cake or loaf: Pour the batter into a greased or silicone mold and bake for 30 to 40 minutes.

For muffins: Divide the batter among muffin tins and bake for 20 to 25 minutes.

Cooling and serving
Let cool before carefully unmolding. Serve at room temperature to fully enjoy the fudgy texture.
